Preparation
The dough is so easy to prepare that you have time to knead it while the deep-frying oil warms up. First, combine the flour passed through a sieve with baking powder and a pinch of salt.
Whisk milk and kefir separately with sugar and melted but slightly chilled butter. When the sugar crystals are dissolved, pour the liquid into the dry ingredients.
Knead the dough with a spatula until all the ingredients come together. Long kneading or aggressive beating of the dough with a whisk or mixer will cause the finished donuts to become rubbery, so be careful.
Lightly grease your palms with vegetable oil, take about half a tablespoon of dough and roll a donut. Place the dough carefully in the heated oil and fry until a pronounced golden brown color. Transfer the finished homemade donuts to napkins to absorb excess fat.
