100 g of condensed milk contains 323 kcal. It is best to consume no more than 25-50 g of treats per day.
What you need to remember
- For homemade condensed milk, fresh whole milk without additives is best suited. It can be rustic raw materials or a store product with a fat content of more than 2%. Powdered milk can also be used. But then there will be much less useful properties in the delicacy.
- It is best to cook in a wide dish with a thick bottom.
- Add a pinch of baking soda to the milk to prevent curdling. This will not affect the taste.
- To make the finished condensed milk more tender and homogeneous, beat it with a blender or whisk.
- To thicken the treat, refrigerate it for a few hours.
- Ready condensed milk is poured into sterilized jars and stored in the refrigerator.
Classic homemade condensed milk
Ingredients:
- 5 glasses of high fat milk;
- 2, 5 cups of sugar.
Preparation
Pour milk into an enamel bowl with a thickened bottom and put on a low heat. Once the liquid has warmed up a little, add and stir the sugar until it dissolves.
Milk will thicken faster if you add 3-4 cups of sugar, but it will be much sweeter.
Reduce heat to low and, stirring constantly, cook the mixture for 2-3 hours, until the milk thickens and the volume of the mixture is reduced by two thirds. The finished product has a creamy yellow tint.
Homemade condensed milk in a bread maker
Ingredients:
- 5 glasses of high fat milk;
- 1, 5 cups of sugar;
- 1 bag of vanillin.
Preparation
Pour milk into a saucepan, bring to a boil on the stove, and then pour into a baking dish. Add sugar and vanillin.
Select the "Jam" mode and send the mixture to the bread maker for 1 hour. Then remove the bucket and let the milk cool for 5-10 minutes. This procedure will need to be repeated twice more. If you want to get lighter condensed milk, the third time the bread maker can be turned on for half an hour.
Homemade condensed milk in a slow cooker
Ingredients:
- 2 glasses of milk;
- 1.5 cups whole milk powder;
- 2 cups granulated sugar.
Preparation
Place a deep saucepan over medium heat, pour milk powder and sugar into it, add milk and stir the mixture with a whisk until smooth.
Then pour the milk with sugar into the multicooker bowl and run the Soup mode for 25 minutes without closing the lid and stirring the milk mixture constantly. After the mixture has boiled, activate the "Baking" mode for 20 minutes.
Homemade condensed milk from powdered milk
Ingredients:
- 4 tablespoons of powdered milk;
- 4 tablespoons of dry cream;
- 2 tablespoons of sugar;
- 50 g butter;
- 1 tablespoon water or milk.
Preparation
Pour water or milk into a saucepan and bring to a boil over medium heat. Add butter and sugar and beat the mixture with a blender, mixer or whisk, adding milk powder a little at a time. Cook the resulting mass in a water bath until the milk thickens.
Homemade condensed milk in an airfryer
Ingredients:
- 3 cups of sugar;
- 1, 5 glasses of milk.
Preparation
In a separate saucepan, combine the sugar and milk until smooth. Place the resulting mixture in the airfryer and cook in two stages. First, cook for 30 minutes at the highest temperature and speed. Then let the milk reach 1–1.5 hours at an average speed and a temperature of 205 ° C.
Homemade condensed milk on a steam bath
Ingredients:
- 2, 5 glasses of high fat milk or cream;
- 3 glasses of powdered milk;
- vanillin or vanilla sugar.
Preparation
Prepare two pots of different diameters in advance. Pour water into a large container and place over medium heat. In a smaller one, mix all the ingredients, except for the vanilla, which must be added at the end of cooking.
After boiling water, place a saucepan with the prepared mixture in it and cook for an hour, stirring occasionally.
Homemade condensed milk in 15 minutes
Ingredients:
- 1 glass of whole milk
- 1, 3 cups powdered sugar;
- 20 g butter.
Combine milk, powder and butter in a saucepan. Put on low heat and heat until smooth, stirring constantly. When the mixture starts to boil and foam appears on it, increase the flame to medium and continue stirring. After 10 minutes, the condensed milk will be ready.
