A flavorful sauce can be made with aquafaba, plant-based milk, starch, cashews, or avocado.
1. Lean mayonnaise with legume liquid
This liquid is called aquafaba. To avoid wasting time soaking and boiling, use canned beans, peas, or chickpeas. Then the mayonnaise will be ready in a matter of minutes.
Ingredients
- 150 ml of aquafaba (approximately the same amount of liquid will be in one 425 ml can);
- 1 teaspoon sugar
- ½ – 1 teaspoon of salt;
- 1 teaspoon lemon juice
- 1 teaspoon of vinegar (apple or table vinegar 9%);
- 350-450 ml of vegetable oil.
Preparation
Add sugar, salt, lemon juice and vinegar to the aquafaba and whisk lightly with a blender. While continuing to foam, pour in the oil in a very thin stream.
First put in 350 ml of oil. If the mayonnaise is thin, pour in the rest and beat. The more oil, the thicker the mixture will be. So the consistency can be adjusted to your liking.
If you are using red beans, the mayonnaise will appear slightly purple. On liquid from white beans, peas or chickpeas, the sauce will turn out to be white.
2. Lean mayonnaise on vegetable milk
Any milk can be used, for example, oat, soy, rice, nut milk (almond is ideal).
Ingredients
- 100 ml of vegetable milk;
- 200 ml of vegetable oil;
- 1 teaspoon mustard
- 1 teaspoon sugar
- ½ teaspoon salt;
- ½ teaspoon ground white pepper - optional;
- 2 tablespoons lemon juice or 9% table vinegar.
Preparation
Blend the chilled milk and butter into a smooth paste.
Add mustard, sugar, salt, white pepper, lemon juice, or vinegar. Beat the sauce until thickened.
3. Lean mayonnaise with starch
This sauce can hardly be distinguished from the store.
Ingredients
- 200 ml of water;
- 1½ tablespoon cornstarch
- 1 teaspoon sugar
- ½ teaspoon salt;
- 1 teaspoon mustard
- 2 teaspoons lemon juice or 9% table vinegar
- 200 ml of vegetable oil.
Preparation
Boil about 150 ml of water in a saucepan. Dissolve the starch in the remaining liquid. Stir constantly, pour it into boiling water and let the mixture thicken. Cool it down to room temperature.
Add sugar, salt, mustard, lemon juice or vinegar and oil. Whisk with a blender until smooth.
4. Lean cashew mayonnaise
Cashews have a delicate creamy taste. It is not surprising that the mayonnaise from these nuts is simply amazing.
Ingredients
- 150 g raw cashews;
- 1-2 cloves of garlic;
- 1 tablespoon lemon juice
- ¼ – ½ teaspoon of salt;
- a pinch of sugar - optional;
- 1-2 tablespoons of vegetable oil;
- 3-4 tablespoons of water.
Preparation
Soak cashews in water overnight. Then drain the liquid, add garlic, lemon juice, salt, sugar, oil and water. Use a blender to achieve a uniform consistency.
If the mayonnaise seems thick to you, add a little more water.
5. Lean avocado mayonnaise
The avocado will give the sauce a creamy texture and a beautiful green hue.
Ingredients
- 1 large ripe avocado;
- 1 teaspoon sugar
- ½ teaspoon salt;
- 2 tablespoons lemon juice
- 200 ml of vegetable oil.
Preparation
Puree the avocado pulp, sugar, salt and lemon juice with a blender. Pour in the butter and beat until smooth.
