Preparation

Add sugar, salt, lemon juice and vinegar to the aquafaba and whisk lightly with a blender. While continuing to foam, pour in the oil in a very thin stream.

First put in 350 ml of oil. If the mayonnaise is thin, pour in the rest and beat. The more oil, the thicker the mixture will be. So the consistency can be adjusted to your liking.

If you are using red beans, the mayonnaise will appear slightly purple. On liquid from white beans, peas or chickpeas, the sauce will turn out to be white.
