Inexpensive Lunch: Bang Mi Turkey Sandwich

The ideal way to use leftover turkey from dinner is to use it on sandwiches. We propose to cook one of the most popular Vietnamese dishes - the ban mi sandwich, which is convenient to take with you and tease the appetite of everyone around you.

Ingredients

For meat:

• 200 g of boiled or baked turkey;
• 4 tablespoons hot chili sauce
• zest of one lime.

For the sauce:

• ¼ lime juice;
• 4 tablespoons of mayonnaise;
• 1 teaspoon grated ginger
• 1 clove of garlic

For the salad:

• 1 cucumber;
• 1 carrot;
• ¼ a small head of cabbage;
• ½ lime juice;
• 1 ½ tablespoon of soy sauce.

For filing:

• 1 baguette;
• coriander greens;
• chili flakes;
• 4 tablespoons liver pate.

Preparation

Despite the large list of ingredients, it takes ten minutes to assemble such a sandwich.

It is enough to disassemble the turkey into fibers and heat it up in a frying pan. The sauteed pieces are then tossed in the lime zest and hot sauce. Wait another 1-2 minutes for the sauce to caramelize slightly.

The sauce is prepared even faster: mix mayonnaise with grated ginger, garlic and lime juice mashed in a mortar.

For the salad, finely chop the cabbage. Grate the cucumber and carrots. Season the vegetable mixture with lime juice and soy sauce.

Cut the baguette in half and divide each of the halves by making a horizontal cut. It is better not to cut through until the very end, so that it is more convenient to eat the sandwich. Grease the bottom half of the baguette with pate, top with the turkey in the sauce and salad. Drizzle with hot mayonnaise and top with coriander greens and chili flakes as desired.

The finished sandwich can be cut into smaller pieces and packed in a lunch box, or you can start eating immediately.
