Preparation

2. Salted pumpkin polenta
Ingredients
- 2 ¹⁄₂ cups milk
- 2 cups water
- 1 cup cornmeal
- 1 cup pumpkin puree

- ¹⁄₄ teaspoon ground ginger
- salt and pepper to taste;

Preparation
Pour milk and water into one saucepan, bring to a boil and stir in the cornmeal, stirring constantly with a whisk. If the polenta is too thick, add some hot water, milk or broth.
Remove porridge from heat and add cream cheese, pumpkin puree, spices, salt, pepper and parmesan. Stir everything well again and serve with the selected additions.
3. Sweet pumpkin polenta
Ingredients
- 2 ¹⁄₂ cups milk
- 2 cups of water
- 1 cup cornmeal
- 1 cup pumpkin puree
- ¹⁄₄ teaspoon cinnamon
- ¹⁄₄ teaspoon ground ginger
- 1 teaspoon vanilla extract - optional
- 2 tablespoons brown sugar - optional
- apple slices, chopped nuts, dried fruit, and maple syrup or honey for garnish.
Preparation
Pour the milk and water into a saucepan, bring the mixture to a boil and stir in the cornmeal. Remove from heat, add pumpkin puree, sugar, vanillin and spices and stir the porridge well.
When serving, add a little honey (maple syrup), a chopped apple, and a mixture of nuts or dried fruit.
4. Pumpkin smoothie
Ingredients:
- 450 g pumpkin puree;
- 2 cups of plant-based milk
- 2 cups of ice
- 2 tablespoons honey or maple syrup
- 1 tablespoon vanilla extract or a pinch of vanillin
- ¹⁄₄ tablespoon of cinnamon
- ¹⁄₄ tablespoon ground ginger
- ¹⁄₄ tablespoon ground nutmeg
- ¹⁄₄ tablespoon ground cardamom
