Most often, ice cream is made on the basis of milk or cream. But it turns out that a decoction of chickpeas can also become the basis for this delicacy.
Ingredients:
- 300 ml chickpea broth;
- 10-20 g sugar;
- 5 ml lemon juice;
- 1 g vanillin;
- jam or jam (optional).
Preparation
Soak the chickpeas for 3-4 hours. Then cook for an hour in the same water and strain. In our recipe, the broth is the main ingredient. This broth is called aquafaba. It is widely used in desserts and baked goods. The uniqueness of aquafaba lies in the fact that when whipped in a mixer, it becomes similar to egg whites. With prolonged whipping, slightly cloudy water turns into a lush snow-white mass!
Once this amazing process begins, add the rest of the ingredients. For flavor, we need vanilla powder or vanilla extract. Lemon juice will add an expressive sourness that sets off the sweetness of cane sugar or jam.
While whipping the chickpea broth, you can add various jams or preserves, so the taste of ice cream is limited only by your imagination.
Send the mass completely whipped with all the ingredients to the freezer for an hour and a half and, if desired, garnish with fresh fruits or berries.
