How to prepare chanterelles
Go through the mushrooms and separate from foliage and other large debris. Place the chanterelles in a container of cold water. Wash thoroughly, removing any dirt. You can use a cloth or soft sponge. Cut off the bottom of the legs. Chanterelles can be left intact, especially small ones, or cut into several pieces.

How much to cook chanterelles
The cooking time depends on how the mushrooms will be used next. After boiling, fresh chanterelles should be boiled:
- for soup - 15–20 minutes;
- before pickling - 20-25 minutes;
- before freezing - 15–20 minutes;
- before frying - 5-10 minutes (although chanterelles are rarely boiled).
The frozen mushrooms will be ready 10-15 minutes after boiling. If you are going to fry them, then you do not need to cook them first.
How to cook chanterelles
Pour water into a saucepan and salt - ¹⁄₂ tablespoon of salt is enough for 1 liter. Wait for the liquid to boil and add the mushrooms.
Bring the water to a boil. After that, cook the chanterelles as much as needed. Skim off any emerging foam if necessary.
If you're making soup with chanterelles, you can cook them right away with the rest of the ingredients. But only on condition that the mushrooms are very thoroughly washed and peeled. If in doubt, after boiling, transfer the chanterelles to the soup and cook for at least 5-10 minutes for the dish to have a mushroom aroma.
