Recipe number 1. Spicy homemade ketchup

Ingredients:

  • 1 tbsp. l. olive or any other vegetable oil;
  • 1 small onion, finely chopped;
  • 2 cloves of garlic, minced;
  • 1/4 cup sugar
  • 1/2 tsp paprika;
  • 1/4 tsp ground allspice;
  • 1/4 tsp ground cloves;
  • 1/3 cup white vinegar
  • 1 tbsp. l. tomato paste;
  • 2 cans (240 ml each) of tomato pulp;
  • salt and freshly ground black pepper to taste.

Cooking. Heat vegetable oil in a small saucepan, add onion and garlic there and sauté for seven minutes over moderate heat.

Then add sugar, paprika, ground allspice and cloves there and cook until the sugar melts. Then add vinegar and tomato paste and cook over medium heat for 3 minutes until thickened. When the mass thickens, add tomato pulp there and leave to simmer for 15–20 minutes until thickened.

Beat the finished ketchup thoroughly with a blender until the mass is completely homogeneous and at the very end add salt and freshly ground pepper to taste.

Recipe number 2. Spicy homemade ketchup

Ingredients:

  • 2 tbsp. l. olive oil;
  • 1 medium onion, finely chopped
  • 1 clove of garlic, minced
  • 1 tbsp. l. tomato paste;
  • 1 tsp salt;
  • 1 tsp ground mustard seeds;
  • 1/2 tsp paprika;
  • a large pinch of ground cloves;
  • 1/4 tsp ground allspice;
  • 1/2 tsp ground (or flakes) hot pepper;
  • 1 large can (850 ml) tomatoes in their own juice, chopped
  • 1/2 cup sugar
  • 1/4 cup apple cider vinegar

Cooking. Heat vegetable oil in a small saucepan with a thick bottom and add the onion, sauté it for 6-8 minutes. As a result, the onion should turn a little golden. Then add the garlic and sauté for another 1 minute. Then add tomato paste, salt, other spices and cook, stirring constantly, for 1 minute. Then add sugar, vinegar and chopped tomatoes in your own juice. Leave the mixture to simmer over low heat until thickened (about 45 minutes).

Beat the finished ketchup with a blender until smooth and rub through a sieve to make the mixture silky.

Recipe number 3. Spicy spicy ketchup

Ingredients:

  • 1 medium onion, diced
  • 1 tbsp. l. olive oil;
  • 1 large can (850 ml) tomatoes in their own juice;
  • 1/2 cup apple cider vinegar
  • 1/4 cup sugar
  • 1 tsp dark honey;
  • 1/2 tsp cinnamon;
  • 1/2 tsp ground cloves;
  • 1 tsp celery seed;
  • 3 hot pickled peppers;
  • salt to taste.

Cooking. Heat the oil in a small saucepan. Add the onion and sauté until golden brown. Then add the tomatoes along with the juice, crush them with a spoon and bring the mixture to a boil. Add all the other ingredients there and leave to simmer for 1 hour. After that, beat the ketchup with a blender until smooth and keep on fire until the mixture becomes the consistency you need.

Recipe number 4. Ketchup with curry

Ingredients:

  • 2 tbsp. l. olive oil;
  • 1 medium onion, finely chopped
  • 1 clove of garlic, minced
  • 1 tbsp. l. tomato paste;
  • 1 tsp salt;
  • 1 tbsp. l. curry powder;
  • 1 tsp ground mustard seeds;
  • 1/2 tsp paprika;
  • a large pinch of ground cloves;
  • 1/4 tsp ground allspice;
  • 1/2 tsp ground red pepper;
  • 1 large can (850 ml) tomatoes in their own juice;
  • 1/2 cup sugar
  • 1/4 cup apple cider vinegar

Cooking. Heat vegetable oil in a small frying pan and add onions. Saute until golden brown, then add garlic and cook for another 1 minute. Then add tomato paste, salt and all the spices, mix everything well and add sugar, vinegar and tomatoes in your own juice. Cook the ketchup over low heat until thickened (about 45 minutes).

After that, beat the mixture with a blender until smooth and rub through a sieve. Ready-made ketchup can be poured into jars and stored in the refrigerator for up to 1 month.

Recipe number 5. Spicy ketchup with ginger

Ingredients:

  • 1 medium onion, finely chopped
  • 2 tbsp. l. grated fresh ginger;
  • 2 tbsp. l. chopped garlic;
  • 1 ½ tbsp. l. vegetable oil;
  • 1 cup of dry rose or dry white wine;
  • 1/2 cup tomato paste
  • 3 tbsp. l. apple cider vinegar;
  • 3 tbsp. l. Sahara;
  • 1 tbsp. l. dijon mustard;
  • 1/2 tsp salt;
  • 1/2 tsp black pepper;
  • 1/8 tsp cayenne pepper;
  • 2 tbsp. l. lemon juice.

Cooking. Heat the oil in a small saucepan and saute the onions, garlic and ginger until soft. Then add wine, tomato paste, sugar, vinegar, mustard, salt, black and cayenne pepper, mix everything well and cook over low heat until thickened for another 5-6 minutes. After that, remove the sauce from the heat, let it cool slightly, add the lemon juice and beat it with a blender until smooth. Rub the finished ketchup through a sieve.
