We offer you five appetizers - lobio, soft cheese with herbs, forshmak, bacon with wild garlic and babaganush - which go well with both bread, flatbread or lavash, and with vegetables.

Babaganush

Babaganush (baba ganush, or baba ganuj) is a popular oriental dish, an appetizer consisting mainly of mashed ready-made eggplants mixed with spices (for example, sesame paste, olive oil, lemon juice). It goes well with cakes and pita bread!

Ingredients:

  • 1 kg eggplant;
  • 1/2 tbsp. tahini;
  • juice of half a lemon;
  • 1 clove of garlic;
  • 2-4 st. l. olive oil;
  • a pinch of cumin;
  • 1/2 dry hot pepper;
  • 2 tsp salt;
  • cilantro or parsley.

Tahina (tahina) is a sesame paste. You can cook it yourself.

Forshmak

Forshmak (German Vorschmack - appetizer) is a dish made of minced meat (or herring), baked with potatoes, sour cream, onions and peppers, which is referred to as appetizers. Serve with bread as a spread.

Ingredients:

  • 2 large boiled potatoes;
  • 1 spiced herring fillet;
  • 1 onion;
  • 1-2 tbsp. l. lard (here: from guinea fowl);
  • salt, black pepper.

Soft cheese with herbs

This French version of the curd snack is great for lightly toasted bread. This toast is easily turned into a sandwich if you take any fresh dark bread as a base and add lettuce and a couple of slices of fresh cucumbers!

Ingredients:

  • 300 g of homemade soft cottage cheese;
  • 4 shallots;
  • a clove of garlic;
  • a bunch of parsley and chives;
  • a sprig of mint;
  • a couple of thyme sprigs;
  • 1/4 tbsp. olive oil;
  • salt, black pepper.

Lard with wild garlic

This appetizer option goes well with black bread. For a change, you can add a bunch of dill there!

Ingredients:

  • 50 g lard;
  • a bunch of young wild garlic;
  • 1 tsp salt.

Lobio

Lobio (from Georgian ლობიო, [Lobi]) is a Georgian dish, as well as a common name for beans (both green, green beans, and beans). It goes well with pita bread, herbs and vegetables.
