You won't find such an option in the settings, but there is always a solution.
Denying access
If you want to log out while keeping your account on your phone, then you need the Google site. Open it, log in under the account that is used on the phone, and go to the "My Account" section.
From the Security & Sign-in menu, select Device Actions and Account Security. Click View Connected Devices.
Select the device you want to sign out of. Click "Close access" and confirm the ban.
After being banned, a warning will appear on the device that you are signed out of your Google Account. To log in again, you must enter a password.

Reset
If you need to sign out of your Google account to sell your phone or tablet, then use factory reset to completely clear the device from your personal data. It can be executed using standard Android tools.
Open the settings and go to the "Restore and reset" section. Select "Factory data reset". See what data will be erased and confirm the operation.
