If guests are already on the doorstep, prepare rolls with pickles, stuffed mushrooms, mini pizzas or apples in batter. It's fast, tasty and beautiful.
1. Cucumber baskets with smoked salmon
Ingredients
- 1½ large cucumber;
- 120 g cream cheese;
- ½ bunch of dill;
- 1 teaspoon lemon zest
- ½ teaspoon lemon juice;
- ¼ a teaspoon of ground black pepper;
- 120 g smoked salmon.
Preparation
Cut the cucumbers into 12 slices 2 cm thick (butts must be cut off). Use a small spoon to make a depression about halfway in each circle. Transfer the cucumbers to a paper towel for 15 minutes to drain any excess liquid.
Meanwhile, combine the cream cheese, chopped dill (leave a few twigs for garnish), zest, juice, and black pepper. Fill each basket with ½ teaspoon of buttercream.
Cut the salmon into small thin strips, roll them into rolls and place on the cream. Put a small sprig of dill inside each fish roll.
2. Stuffed champignons
Ingredients
- 250 g sausages;
- 250 g cream cheese;
- 250 g champignon caps.
Preparation
Grind the sausages and fry them in a pan until golden brown. Place the sausages in a bowl and mix with the cream cheese.
Fill the mushrooms with the resulting mixture and place on a lined baking sheet with foil. Bake in an oven preheated to 200 ° C for 5-7 minutes, until the mushrooms are fried.
3. Crostini with tomatoes and mozzarella
Ingredients
- 24 thin baguette slices;
- 2 tablespoons olive oil
- 400 g of chopped tomatoes in their own juice;
- 200 g mozzarella;
- a few sprigs of basil;
- ¼ teaspoon of sea salt;
- ¼ a teaspoon of ground black pepper;
- 2 cloves of garlic.
Preparation
Place the baguette on a parchment-lined baking sheet. Grease them with oil and bake in an oven preheated to 220 ° C for 4-5 minutes, until they are lightly browned. Meanwhile, combine the tomatoes, diced mozzarella, chopped basil leaves, salt and pepper.
Cut the garlic cloves in half and rub the toasted and slightly cooled baguette slices with them. Then place the cheese mixture on the bread.
4. Baked olives in cheese dough
Ingredients
- 200 g grated cheddar cheese;
- 2 tablespoons of butter;
- ½ cup flour;
- ⅛ teaspoon of cayenne pepper;
- 24 stuffed olives.
Preparation
Combine cheese and butter. Add flour and pepper and mix thoroughly. Wrap the olives in cheese dough and place on a parchment-lined baking sheet. Bake in an oven preheated to 200 ° C for 15 minutes, until the dough is browned.
5. Rolls with pickles
Ingredients
- 5 thin pita bread;
- 250 g cream cheese;
- 450 g ham;
- 7 pickles.
Preparation
Spread cream cheese on the pita bread. Top with thin slices of ham and cover them with another layer of cream cheese.
Cut the cucumbers in half lengthwise. Place them flat side on the cheese, wrap and cut the pita bread into slices. You can also add whole cucumbers if you wish, but then you will need more of them.
Pierce the rolls with skewers so that they do not fall apart. If you do not plan to serve the rolls immediately after cooking, refrigerate them.
6. Zucchini Chips
Ingredients
- 2 medium zucchini;
- 1 ½ tablespoon olive oil
- ⅓ glasses of grated Parmesan;
- ⅓ glasses of bread crumbs;
- a few sprigs of basil;
- 1 clove of garlic;
- ⅛ teaspoon of salt;
- ⅛ teaspoon ground black pepper.
Preparation
Cut the zucchini into slices about 0.5 cm thick. Brush with olive oil on all sides. Combine Parmesan, bread crumbs, chopped basil leaves, chopped garlic, salt and pepper.
Dip the zucchini in the cheese mixture and place in one layer on a parchment-lined baking sheet. Bake the chips in an oven preheated to 220 ° C for 25-30 minutes until crisp.
7. Jamie Oliver's Baked Flounder Fillet
Ingredients
- 450 g flounder fillet;
- 50 g sifted flour;
- sea salt to taste;
- ground black pepper - to taste;
- 2 large eggs;
- 2 handfuls of bread crumbs
- 1 tablespoon of paprika;
- some olive oil.
Preparation
Cut the fillets into small strips. Dip them first in flour mixed with spices, then dip them in beaten eggs, and finally in a mixture of rusks and paprika.
Place the fish on a greased baking sheet and bake in an oven preheated to 220 ° C for 10-15 minutes until golden brown. Serve with tartar sauce, aioli or ketchup.
8. Chicken canapes in spicy sauce
Ingredients
- 600 g chicken breasts or thighs;
- 2 tablespoons olive or melted butter
- 2 tablespoons of honey;
- 1 tablespoon orange peel
- 1 teaspoon chili sauce
- ½ teaspoon salt;
- ½ teaspoon ground black pepper.
Preparation
Cut the chicken into cubes about 2.5 cm wide. Combine the rest of the ingredients, add the chicken to the sauce and stir. Leave to marinate for 10 minutes.
Place the pieces of meat on a baking sheet lined with foil or parchment. Drizzle over the remaining marinade and roast the chicken in a preheated 180 ° C oven for 15–20 minutes.
Pierce each chicken with a skewer before serving.
9. Mini pizzas
Ingredients
- 8 thin slices of bread (choose a bread that will not crumble or break when curled);
- 16-24 thin slices of salami;
- 1 cup grated mozzarella
- ½ glass of milk;
- ¼ glasses of grated Parmesan;
- 2 tablespoons of olive oil.
Preparation
Cut the crusts of the bread to form even rectangles. Gently roll each piece with a rolling pin.
Sprinkle mozzarella over the bread, top with 2-3 salami slices and roll tightly. Dip in milk and sprinkle with Parmesan, leaving some cheese for later.
Fry the mini pizzas in a skillet with olive oil until golden brown. Transfer to a paper towel to drain off excess oil. Place on a platter, sprinkle with Parmesan cheese and serve with any sauce of your choice.
10. Stuffed eggs with bacon
Ingredients
- 12 eggs;
- 6 slices of bacon;
- ½ cup mayonnaise;
- 1 tablespoon mustard
- ½ teaspoon of paprika;
- sea salt to taste;
- ground black pepper - to taste;
- a few sprigs of parsley.
Preparation
Boil hard boiled eggs. While they are cooling, fry the bacon over medium heat for 4-5 minutes until it is crispy. Then cut it into small pieces.
Peel the eggs and cut them in half lengthwise. Remove the yolks and place them in a separate bowl. Combine yolks, bacon, mayonnaise, mustard and spices until smooth. Fill the protein with this mixture.
Sprinkle paprika or pepper on the eggs before serving and garnish with chopped parsley.
11. Apples in beer batter
Ingredients
- 1 glass of vegetable oil;
- 1 large egg;
- 1 glass of beer;
- 1 cup sifted flour
- 1 teaspoon salt
- 1 teaspoon cinnamon
- ⅛ teaspoon of cayenne pepper;
- 3 large apples.
Preparation
Pour 5 cm of oil into a deep saucepan and heat it over medium heat to 190 ° C. If you don't have a thermometer, toss a piece of potatoes into the pot. If the oil around it starts to sizzle, then it has reached the right temperature.
In the meantime, whisk the egg white and blend with the beer, flour and spices until smooth.
Peel the apples, remove the core and cut them into slices about 0.5 cm wide. Dip them in batter and dip them in heated oil for 1-2 minutes, until the apples are golden brown. Place apples on a paper towel to drain off excess fat.
By the way, if you prefer the non-alcoholic option, then replace the beer with soda water.
12. Fruit with sweet sauce
Ingredients
- 30 g cream cheese;
- vanillin on the tip of a knife;
- 1 tablespoon orange peel
- 60 g icing sugar;
- 60 ml orange juice;
- 60 ml whipped cream;
- any fruit.
Preparation
Use a mixer to combine cream cheese, vanillin and zest. Then add the icing sugar a little at a time, whisking the sauce each time. Pour in orange juice, beat with a mixer. Add cream and whisk the sauce until smooth.
Serve with any fruit you like. If they are large, such as apples or bananas, cut them into slices. This will make it easier to dip them into the sweet sauce.
